Polk Moms

Connecting moms in Polk County, Fla.

I just had my first cup of Egg Nog of the season.  It is so yummy!  I wanted to share one of my favorite brands and believe it or not, it's a store brand.

My favorite is Publix brand Egg Nog.  I usually buy the lowfat- so tasty!  There's another name brand that I really like but can't think of which it is right now.  I guess I'll have fun taste testing to find it this season.

I don't know why I never look, but is Egg Nog available year round?  If it is, where have you seen it?

Drinking this just completes the holidays for me.

If you have recipes that include cooking with eggnog, please post them.  : )

Hello, I am here because I LOVE EGGNOG, Err sorry. Let me start over. I'm a guy. I got medically retired from my last job and my wife is still working so I would be the 'Mom' but we don't have any kids. I was trying to find the secret recipe for T. G. Lee Egg Nog when I happened upon your discussion I like it and joined before I noticed the Moms part. So just for your Eggnog discussion group - Will you have me. If you say no I will take my recipes and go sadly away.

Hi, Dusty, we would love to have you join in on any of our topics.  Mom or not, this is an open and friendly board.  Besides, we would LOVE to hear all about eggnog recipes.  Bring them on.  : ) Welcome to the site!

(View a flourished bow here) I Thank you and will arrange my recipes and share a few choice ones with you when next I am here. BFN Dusty

INGREDIENTS
1 quart AND 1 pint 1% or 2% low-fat milk
1 pint low-fat Vanilla or Plain Kefir milk
eggs (Free range or Organic) OR 1 carton (16 oz) any egg substitute (i.e. Egg-Beaters®)
cups Fat Free Whipped Topping (i.e. Reddi-wip®)
1/2 cup Karo syrup
2 Tbsp Splenda "Sugarblend" (2 Tbsp = 1/4 cup of granulated sugar in case you want to use some other   sweetener use this measurement for your exchange)
1/2 oz rum extract (optional)
1 tsp vanilla (Mexican if you can get it)
1/4 teaspoon fresh ground nutmeg
DIRECTIONS

1. Whisk together eggs/egg substitute, sugarblend, rum extract, vanilla and nutmeg with whisk in large bowl until sugarblend is dissolved and mixture is blended.

2. Add Kefir milk and gently stir in Whipped Topping until blended well. Then add the low-fat 1% or 2% milk. Lastly add the Karo syrup gradually while stirring constantly.

3. Cover and refrigerate 2 hours or until chilled. Stir just before serving. Sprinkle with additional nutmeg, if desired.

This makes a thinner Eggnog. To thicken it you can use whole milk instead of low fat, and drop 1 pint of milk and add another pint of Kifer milk.
You can also add Xanthan gum or Guar gum to thicken it. LOOK these up and be sure you will not have a problem with it. Most people don't. Better safe than sorry.
You can adjust for personal taste as i did. This is my year round Nog.
Take this recipe to your local health food store and ask them how healthy it really is. They will probably not like the Karo syrup and say you should use honey instead. Honey will sweeten like the syrup but will NOT thicken the mix.
Is anybody still out there?

Hi Y'all

  • OK, Nobody out there or nobody wants to talk about eggnog or nobody wants to talk to me. Which is it? II keep coming here but never find anyone else. What gives?

Sorry, Dusty, I do love Egg Nog year round, no doubt.  And I'm certainly happy to see you add a recipe for us to try considering you can only purchase it seasonally it seems.

I'm also sorry to say I've been too busy to try a recipe yet and plus, lol, my new year's resolution was to diet this year.

I've done pretty good in my weight loss but want to lose a little more before I start splurging on the calories and fat in egg nog.  : )

Hi Shawn,

Here's something to try when you get that "gotta hava eggnog" feelin'. Next time you go to the store pickup a small (15.2 oz) bottle of "Bolthouse Farms" 'Vanilla Chai Tea' and a small plain or vanilla low fat yogurt (they even make a lactose free one now) or if you are adventuresome try plain Kefir milk but don't use too much as it is pretty tart. Use just enough yogurt to thicken the Vanilla Chai Tea and add some nutmeg and see if that doesn't taste like eggnog to you. It tastes enough like it to me that I keep a big bottle of the 'Tea' and some yogurt and Kefir milk in the fridge all of the time.

This has to be the most interesting thing I've heard all day.  I never would have figured those combinations, especially for an egg nog fix.   It's something I'll definitely keep in mind and glad to know it's here so I can reference back to it.   :)

let me know what you think. I have no idea what made me put it together in the first place.
