great article and some great recipes.  I feel good because a lot of these foods we already eat, we are trying to do the "healthy" thing this year and so far so good!  Kale is something I always wanted to try and heard about baking them and they turn into almost a potato chip (my downfall is potato chips...) so might give that a try.

I tried my hand at kale chips, and I liked them; however, they did not go over well with my family. I am thinking a second chance is in order (maybe with salt and vinegar.) Also, I went on vacation recently and had a roasted beet and goat cheese salad. I have been thinking about it ever since! Thank you for the post!

Mmm. I love all of these, except for the bulgar...not sure I've tried that.

I made kale chips a few times. Once with parmesan, once with salt...and I think there was a soy sauce one. Not everyone in the family was a fan, but I liked them. You do have to play around with temperature and time, because they can be too crispy or not done enough. Seems like the healthier way to go would be raw any way. I like to throw some in my mixed greens salad, but it has to be tender (baby kale?)
