Yesterday I took the pork loin roast I had and put it in a container with some balsamic vinegar and brown sugar. Stuck it in the oven at 350 degrees till it reached 150 degrees inside temp. I put it in a container to rest. A few hours later when I sliced it for dinner (got it cooked ahead of time) it was still moist. Was also sweet tasting (not overly sweet). Got plenty leftover for tomorrow too. I had some leftover potatoes and baby carrots from the chicken I cooked in the crock pot the other day so I heated those up with it.

Sounds yummy!! How much Balsamic & brown sugar?
Permalink Reply by Tabby on January 10, 2013 at 10:29am It called for a tablespoon of each, but seems like not enough. I added more to be like a 1/4 cup of each (I don't really measure when I cook, I go by taste, smell and look).
I agree, a tablespoon does not seem like enough. I usually use recipes as a guide and adjust to my taste. Thanks for the info, I am going to give it a try.

Thanks! I've signed up for the site and have found some yummy looking recipes!!
I adore balsamic vinegar. I use it when I do roasted chicken. And I signed up also at the link you sent.
Thank you!!

Permalink Reply by Tabby on January 10, 2013 at 5:36pm You're all welcome!! With the way the economy is and time with working, school, sports, we all need cheap, healthy, and quick meals. I live by my crock pot all summer. Doesn't heat up the house like the oven does. Helps cut down a bit on the electric bill. Managed to keep it below $300 last summer.
Permalink Reply by Tabby on January 14, 2013 at 11:15am Made taco chicken in the crock pot this morning. Sprayed the pot with cooking spray, laid down sliced onions, laid out boneless/skinless chicken breasts and sprinkled with Taco Seasoning on it. Set it on low and it only took a couple hours if that to cook. Just added a bit more water and shredded the chicken. Will let it simmer a bit more, then cool and freeze. Although I may just add it to some warm tortillas and top with cheese. I do have salsa here too. Yummy!!
Got some chicken leg quarters marinading in garlic herb sauce (Ken's Marinades). Will cook that tomorrow. Got a good deal on chicken quarters the other day at the Dollar General Market for 50% off. Baked up a package yesterday and having leftovers today.
I tried the Garlic Lime Chicken from crockingirls.com and it was HORRIBLE!! It not only looked disgusting and unappetizing, it was so salty that we couldn't even eat it. All the chicken went down the garbage disposal. Then I threw away the recipe. Not one I will ever try again. If anyone tries a really good recipe from this website, please share.
Permalink Reply by Tabby on January 14, 2013 at 12:28pm I had seen that recipe and had thought about trying it, but will not now..Thank you Gloria. I often cook chicken in the crock pot, but I use dry seasonings. I would spray with cooking spray (if I have no liners), lay out potatoes, baby carrots, celery, top with chicken that was sprinkled with all seasoning or dry onion soup mix. With the juice from the chicken it drips down and adds just enough juices.
For beef stew I add to the crock pot cooked ground beef, frozen mixed veggies, diced potatoes, chopped onions, couple jars of beef gravy or packets of dry gravy with water (depends on what I have in the pantry). You can also use any leftover steak too if you have any. I can turn the 2 pieces of steak to the stew to feed the 4 of us again. Sometimes I'll make Bisquick dumplings and drop them on top too.
For beef veggie soup I do beef (anything cooked and leftover or you can do raw steak pieces in it since it'll cook at it simmers and get tender), frozen veggies (sometimes 2 bags since we like veggies), chopped onion, couple cans of diced and stewed tomatoes (juice too) and a bit of beef broth. Let it sit 4 hours on high 6-8 on low and dinner is done.
I don't really measure so it's hard to list exactly how much seasonings go in. I'm a look and taste kinda girl..LOL

Permalink Reply by Tabby on January 15, 2013 at 8:04pm I made Lasagna in the crock pot today and it came out great. Sprayed the pot with cooking spray and got a bit of crunch on the cheese around the edges. Couldn't tell the difference of cooked in a crock pot or oven. I am surprised I got any for leftovers tomorrow. I used cooked ground beef and two jars of Ragu. I found it easier to spread the ricotta mixture on the noodles before putting them in. Also will post the link for Stuffed Shells in the crock pot. Got race reviews on one of the groups.
