Pumpkin Roll Cake 3 eggs1 cup granulated sugar2/3 cup of solid packed pumpkin (canned)1 Teaspoon baking soda3/4 cup all purpose flour1 Teaspoon cinnamon1 cup chopped pecans ( optional) Preheat oven to 375 degrees. Grease jelly roll pan or oblong cookie sheet pan with sides. Beat eggs with the cup of sugar until mixture is light and creamy. Add pumpkin,baking soda, flour and cinnamon. Mix well.
